San Sebastián-style Basque Burnt Cheesecake

Inspired by the cheesecake made famous at La Viña in San Sebastián, ours is anything but a typical cheesecake. Baked at a high temperature, it develops a deeply caramelised exterior while the centre stays rich, smooth and creamy, with subtle notes of vanilla and espresso.

Made by hand in small batches with cream cheese, cream and eggs. No biscuit base, just the contrast between that burnished top and velvety centre.
